I drool over every, fancy cupcake book I see. But, I know myself. I don’t have the patience for REALLY cool cupcakes. I make quick and easy cupcakes . . . maybe with a little twist. Since it is nearing Valentines’ Day I decided that today was the today for the little food gifts. I made a white cake mix according to the directions. I filled each cupcake cup half-full of batter. Then, I put a dab of mixed berry pie filling on top of each blob of cake batter. I cooked them for five minutes longer than the box called for because of the filling. When the cupcakes were cool, I frosted them with the easy Pillsbury squeezy frosting can and topped them with little, red, kissy, mouths.
These cupcakes don’t rise up tall in the middle because of the pie filling. But, the pie filling makes an ordinary vanilla cupcake extra yummy.
Now, if you want to get a little more fancy, try really large cupcake cups. This time, put a blob of cake batter in the bottom of each cup, then a dab of pie filling and then another blob of cake batter. The cupcakes shown here need to bake about 28 minutes. That is at an elevation of about 4,000 feet. They are deep and squishy. Frost them and throw a few sprinkles on top and you are done !!
These cupcakes with the yummy filling are HUGE. And, because they have a squishy center, I decided to give them to my family and neighbors all ready to eat !
