Here is a GIANT rule. Keep enough food on hand to prepare for the unexpected. Not just the unexpected ‘bad times’ but the doorbell guests at dinnertime. Or those moments when Grandpa looks around for dinner and doesn’t find it. And, you say “oh, my . . . is it dinner time again? How does cereal sound? ” This is one of my favorite, easy, quick and filling “unexpected” meals which I can ALWAYS make in a pinch. I have a couple more. I don’t panic because I know that I have the ingredients in my food storage. Families big and small, young and old . . . guests with big appetites and smiles on their faces and just about anyone else will gobble it up and eat everything.
Yummy Beef Stew for Six
- 2 cans Chunky Steak and Potato Soup
- 1 can green beans, drained
- 1 can sliced carrots, drained
- 1 can diced tomatoes, drained
Yummy Corn Bread
- 1 Corn Bread Mix, any brand
- 1 egg
Yummy Honey Butter
- 1/2 cup soft margarine
- 2 T honey
Mix the stew ingredients together in a large sauce pan. Make the corn bread according to the package. (About 24 minutes cooking time.) Heat the stew while the corn bread is cooking. Put the margarine into a small container. Add the honey. Mix with a fork until blended. Dish out the stew and top with cheese. Either use Parmesan if you have it or frozen, shredded cheese if you have it. If you don’t have either, don’t worry about it. Six bowls, six spoons, six little plates, six knives and six cups for the milk. Yes. Milk.
